Grilled Cheese Sandwich


You'll feel like a kid again once you try my grilled cheese sandwich. If you are anything like my kids, you will come back asking for more. I always thought cheese sandwiches were boring but I found a way to make them more sophisticated and ultra tasty. Think of it as a high-end grilled cheese sandwich. The right amount of salt, a little tang, crispy on the outside and gooey warm on the inside. Drooling yet? Yes, I would happily order this at a restaurant, alongside a green salad. In fact, I always serve this with a green salad for my kids.

If you have a panini grill, great! If you don't, go buy one. We cannot live without ours. We use them for hot sandwiches, pizzas, pancakes, french toast and the list goes on. It's super easy to clean up too. So practical. Use it to reheat your pizza and save electricity from turning on your oven.






Grilled Cheese Sandwich
Serves 3

6 slices of crushed wheat sourdough bread
3 slices of medium cheddar
Shredded Gruy√®re and Swiss cheese
French dijon mustard
Mayonnaise
Unsalted Butter

These instructions are for one grilled cheese sandwich. Repeat until all the sandwiches are done.

Spread one side of bread with mustard and spread one side of another slice of bread with mayonnaise.  These spreads are for the insides of the sandwich. Top one of the bread slices with one slice of cheddar and a handful of shredded cheese. See the photos above. Sandwich this with the other slice of bread. Spread the butter on top. I only spread butter on the one side since it's easier but you can do both top and bottom. Honestly, I don't think you will miss it or need it, if you are using a panini machine. Grill the sandwiches for 2-3 mins or until golden.

Be careful not to over grill the sandwiches to the point where all the cheese seeps out. You want the cheese to just melt so that when you bite into it it's gooey and stringy.

Best served hot with a green salad like a spinach salad. After all, we can't just have carbs and fat for our meal, right? Go big on the salad people.
