Tofu Poke

Inspired by our recent trip to Oahu, I literally threw together a batch of tofu poke to accompany our rice meal one night. We love tako poke and when we were at Down to Earth in Oahu, we decided to try tofu poke since people online recommended it from the store. It was good so when we got back to our hotel, I made a version of it for our vegetarian guest and I made tako poke for us. When I got back home to Vancouver, I made it again since I had marinated tofu in my fridge. It's so easy and so good with hot steamed rice. You can serve it at room temperature or cold. You can throw in cucumber or leave it out all together. If you cut down on the soy sauce or use tofu that is not marinated, you could even eat this alone as an appetizer. If you like tofu, you will definitely like this simple dish :) Enjoy!

Tofu Poke
Serves 4

320 g marinated tofu
2 green onions, chopped
4-5 sprigs cilantro, chopped
2 tbsp sesame oil
2 tbsp soy sauce
1 tsp red chili sauce
1 tsp black sesame seed (I only had black on hand but use white if you want)
1/2 pack dry roasted seaweed (about 2.5 grams)
pinch black pepper

Combine everything and let sit for 30 minutes or so. Delicious served with hot steamed rice.
